The two things that separate it

The format list, which is the honest part

What paying more does not buy

Better sound. Toslink carries a fixed digital signal inside a fixed ceiling: the bits arrive or they do not, and a cable that works is carrying exactly the same audio as one costing five euros. What the money buys is a connector that survives being handled.
