Why is a gain of 1.0 a good thing?

Because it is neutral: light is returned evenly rather than concentrated toward the centre axis. Everyone on a wide sofa sees the same brightness, and there is no hot spot in the middle of the image. Higher gain brightens the middle seat at the expense of the others.

Is a square screen useful?

It is a compromise. A 16:9 film uses the full width and leaves bands above and below; 4:3 material uses the full height and leaves bands at the sides. Nothing is wasted structurally, and some surface is always unlit. It suits mixed use.
